Beach-baked Coral Trout
Serves 2, Gluten-free
1 coral trout
1-2 tbsp olive oil
2 large garlic cloves
5cm knob of fresh ginger
2 red chillies
1 tbsp honey (or rice malt syrup*)
Get a small campfire burning and let it die down to good, hot coals. Scale, clean, rinse and pat the trout dry with paper towel. Rub with olive oil and place on a large piece of alfoil.
Finely slice the garlic, shallots, ginger, lime and chillies, and assemble on top of the trout. Drizzle with honey and wrap up.
Place the trout on hot coals (away from the flames) and bake for about 15 minutes per side. Serve immediately with vegetable fried rice.
*Use rice malt syrup to turn this dish fructose-free
